Best Brunch Recipe Ever
This is a very loaded title; I am well-aware. But if you’re looking for the best brunch meal ever, you’re probably reading the right article. My friend and I recently put something together and it was the fastest, easiest and most delicious brunch item I’ve eaten in a very long time. Maybe ever. Everything before this has now been erased.
For peanut allergies, please be warned that there are spoilers in this recipe and lots of peanut butter. However, if you’ve got a replacement for peanut butter that suits you just fine then feel free to replace!
This magical brunch miracle is all kinds of crunch, soft, sweet and savory. We went from putting the whole thing together to devouring in a very lady-like manner in about 45 minutes (you can do it in less), and in that time, we managed to also enjoy some brunch time mimosas on the balcony so…I mean, waiting isn’t always a bad thing.
We really did think that we’d clean up the entire plate…good Lord were we wrong. We both had probably ate less than a quarter of the plate and ended up with delightful take-away’s for later in the day. (Her enjoying it at 2am on a nursing shift, and me being absolutely ridiculous and sharing. Big mistake.)
Ready to create the best brunch meal ever? The answer is yes.
You will need:
3 cups granola with almonds
1 cup peanut butter, smooth
1 cup strawberries
½ cup blueberries
½ cup raspberries
¾ cup plain, Greek yogurt
(Yes, that is it.)
What you do:
- Start by mixing the peanut butter and granola in a large bowl.
- Line a baking sheet with wax paper. Shape and size do not matter.
- Spread your granola mixture on the wax paper in any shape you want. (Circle shape for the pizza win!)
- Spread Greek yogurt overtop.
- Cover in fruit.
- Let chill for at least 10 minutes, or until mimosas need re-filling.
The longer you let this chill, the harder the crust will stay. After about 5 minutes ours started to get soft and it was harder to transfer to plates, so be quick about it! Unless of course, you’re eating yours off of the baking sheet together. We did something similar to this after a transferring fail.
If you have topping preferences, feel free to get crazy. There are lots of different options of course, including other types of nuts, coconut shavings, chocolate chips, skor bits, other fruits and different flavors of yogurt.
Be warned that this is much more filling that you will probably anticipate, since the peanut butter and granola are irresistible but very easy to fill up on. Now I see that this was probably a good thing or I’d still be in a pizza brunch coma.
