Breakfast Salad: Eggs in Peppery Holes Over a Bed of Spinach

I don’t know what the weather’s been like in your neck of the woods, but we broke a heat record that had been in place for over 100 years. It was like walking into a wall of water. It was GROSS. Spending any length of time standing over a stove and or turning on an oven to bake/roast anything is NOT happening. I am not here for extra added heat to my abode.

I don’t know if I should call this a salad (if you’re needing a salad-salad you should try this Greens & Grain version) or … I mean, I am eating it over a bed of spinach but you totally don’t have to (I one hundred percent think you should because it’s DELICOUS this way). Added bonus: no dressing required because your eggs should (because YES THEY SHOULD) be a bit runny in the center.727eggs-932189_1920

The best part about these peppery eggs is that they double as breakfast food AND a whatever meal you want food. If cooking eggs in pepper slices isn’t your speed, and you’re not opposed to cranking up the oven and adding some heat to your abode, have you tried these supper yummy Avocado Egg Baskets?

And I don’t have the energy to go into it but, ZOMG THE INFINITY WAR LEAK *gasp* Did anything debut at D23 or SDCC that you’re all atwitter about?


Eggs in Peppery Holes Over a Bed of Spinach

Ingredients:727untitled

two sliced pepper rings (1/4 – 1/2 inch)
2 eggs
1 cup baby spinach
2 pieces of bacon, cooked (optional)
1 slice of toast cut into soldiers (optional)

Directions:

Place pepper slices in a non stick pan over medium heat and carefully crack an egg into each pepper slice. Season with salt and pepper if you want.

Put a little water in the bottom of the pan and cover. This will help “poach” the eggs and bit and get the tops to cook over (because you can’t flip these eggs easily).

Cook until whites are solid and there is only a slight wiggle to the center of the egg.

Plate up over the spinach and serve with bacon and toast soldiers.

Dig in.
