Greens and Grains Salad

It hit 85 degrees in my neck of the woods Monday. In March. On the first day of spring. All I wanted to do was sprawl out beneath a window in a sunspot, or better yet: go to the park and lay in the remnants of the winter grass. Basically I wanted to cat my day away. YOU KNOW WHAT I MEAN.

Because it was summerlike outside my brain started thinking about summer eats (again, it’s March but sometimes one just goes along with their brain’s ideas) and I instantly started thinking about my favorite salad at one of the local breweries I frequent. This is my homage to that salad.

This salad is perfect for summer (or spring) nights: it’s light, but packed with healthy things to fill you up and keep you running. If you think you need more I suggest adding some fruit or some cheese (I mean, CHEESE) and, of course, this pairs amazingly well with a light summery,fruity beer (I strongly suggest Schlafly’s Raspberry Hefeweizen if you can find it).321food-1834645_1920

Spring Mix: am I the only human alive who likes spring mix? I Googled it the other day (what … like you’ve never Googled salad ingredients before) and was immediately given a bunch of articles about how it’s the actual worst. Um. No. The actual worst is iceberg lettuce with zero flavor: plus it’s more white than green, and don’t get me started on the wateriness. But I digress. If spring mix isn’t your thing, use whatever lettuce mix blows your skirt up … just, not iceberg I BEG YOU.

Grains: I used farro (my love has been WELL established here and here, so I won’t go over it again) in place of the barley, quinoa, and kamut mix that is used in the restaurant. Use what you like here, but I urge you to use something other than rice (but if you’re a gluten free person RICE IT UP) here, embrace the amazingness that is ancient grains.

SIDEBAR: Marvel’s Iron Fist … the reviews have not been kind. I’ve not watched that many episodes (and have no knowledge of the comics … don’t @ me – I don’t have to know anything about the comics to watch a show or see a movie) and I’ve got to say: so far the way critics and fans have read this show is not wrong. There is a white elitism and a not so subtle racism element happening with this show. And the fact they followed Luke Cage with this … I just, really? There is also quite a bit that, so far, doesn’t make sense … things seem ill conceived, like they rushed through the process (because really how do we go from Daredevil, Jessica Jones, and LUKE CAGE to this? I MEAN HOW?). I’d be interested to hear what you all think about the show itself and how Danny is going to fit into the MCU and the Defenders (because really, HOW is Danny going to fit in?).


Greens & Grains Salad

Ingredients:321untitled

4 ounces baked chicken, sliced
½ cup grains, warm
2 TBSP sriracha ranch dressing (Trader Joe’s is amaze, btw)
2 cups spring mix, rinsed

Directions:

Toss the spring mix into the bottom of a wide pasta bowl or a dinner plate.

Mix warm grains (farro, quiona, rice … whatever strikes your fancy) with 1 TBSP sriracha ranch. Drizzle the remaining dressing over the mixed greens.

Spoon the grains onto the greens. Add sliced chicken to the mix.

Pause and revel in the amazingness that is this salad.

Dig in.
