Grilled Salt and Vinegar Chips
It is officially summer, which means GRILLING SEASON IS HERE. Officially. Unofficially I grill all year round, but there is something a bit romantic about grilling in the summertime with the sun still high in the sky and the bugs singing. If you can’t tell summertime is my favorite time.
These “chips” are, quite frankly, one of my favorite things to make on the grill. They take a bit of prep work, but are worth every bit of the time they take to make. The bitey tang of vinegar, combined with a bit of smoke from the grill sets off the salt perfectly. There’s some kind of magic that happens to the potato on the grill (it has to be the vinegar) that gives the wedge a bit of a crisp layer, nothing like that would happen if the wedges were fried – but a nice departure from how potatoes normally cook up when grilled.
Also if you’re thrown by the wording: a “chip” in this case is not the American version you’re used to seeing everywhere, but the British version which really has no translation into American food because a chip is NOT a French fry and it’s not quite a potato wedge either. A chip, is a chip, is a chip.

After watching this I needed something LIGHTER because holy heavy documentary, Batman … which led me to find (but I haven’t watched, yet): Hulu has a documentary about Batman and Bill (that’s Bill Finger for you non DC comic nerds) and YASSSS, I AM HERE FOR THIS. Grilled Salt & Vinegar Chips
modified from She Likes Food
1-2 russet potatoes
3/4 cup distilled white vinegar
1/4 cup malt vinegar
1 tablespoon olive oil
coarse sea salt
Cup potatoes into large wedges. Place potato wedges into a medium sized pot. Pour in vinegar and then fill the rest of the way with water, about 6 cups, make sure all potato wedges are covered with liquid.
Bring water to a boil, reduce to a simmer and simmer for 20-30 minutes until potatoes are fork tender, but not falling apart.
Drain potatoes and place them into a large bowl. Let cool for a few minutes. Drizzle with olive oil and season with sea salt. Toss to coat potato wedges.
Heat the grill to medium heat and place potato wedges on the grill. Grill for about 10 – 15 minutes, flipping occasionally.
Serve warm with your favorite dipping sauce.
