How to Create the Best Easy Chicken Stir-Fry
It goes without saying that I have a lot of chicken in my freezer. When I was younger and my mom wanted me to make something before she got home, I would totally blank out when all we had was chicken. It seemed bland, it seemed boring! How could we possibly have chicken yet again and expect to come up with something new?
Well, times have changed folks. I’ve become much older and slightly wiser, and I’ve realized the potential of chicken that makes me laugh at my former self. Now when I see chicken? “YES we have chicken! So many options!”
In this week’s episode of ALL WE HAVE IS CHICKEN, I have to be honest. I was scrapping for groceries since it wasn’t market day yet. I had a few vegetables and some pantry regulars, and this was really all I had going for me. Luckily, my brain works in a different way now in the kitchen, and I immediately decide to throw all of the chicken in with the veggies and make a stir-fry because quite honestly it just looked really freaking easy in pictures.

Let’s get started on today’s simple recipe and if you get overwhelmed you seriously need to calm down because it is that easy.
Easy Chicken Stir-Fry (With 3 vegetable or less, might I add).
Prep time: 15 minutes Cook time: 20 minutes
You will need:
- 1½ tbsp. olive oil
- 4 chicken breast
- 2 cups broccoli
- 1 large pepper
- 1 cup mushrooms
- 1 small onion, chopped
- 2 cloves garlic, minced
- Sprinkle chili flakes
- 1 tbsp. sesame seeds
The veggies don’t need to be exact. Use whatever you have and as much of it as you please. Broccoli, carrots, peppers, mushrooms, peas, whatever! I use lots of mushrooms because I am obsessed with them. Sooo…that’s where I’m coming from.
- 3 tbsp. peanut butter
- 4 tbsp. soy sauce
- 2 tsp. Sriracha
- Oil a large skillet with 1 tbsp. oil and cook your chicken. Slice it into long skinny pieces, or chunks, or whatever I don’t care.
- Remove from pan and set aside.
- Add remaining oil to pan and heat.
- Toss in your vegetable choices and sauté for about 5 mins or until they’re at the consistency you like.
- Add garlic and sauté for another minute.
- In a separate bowl, mix together your sauce ingredients. Pour them over the cooking vegetables.
- Toss in the sesame seeds, chili flakes and chicken pieces and let heat for like 2 minutes.

Lots of stir-fry recipes asked for fish oil, sesame seed oil etc. etc. but frankly what is 1 tsp. of that going to do for my recipe? And also, I’m not going out to buy a huge bottle of that just to use 1 tsp. of it and not taste it.
That’s just silly. I omitted those and quite frankly, you’re welcome. But if you want to add them you’re more than welcome, silly people.
