Not Your Typical Tailgate Food: Jalapeño Popper Stuffed Dates

Over the weekend I bought a ginormous bag of dates at Costco, because hey: dates are yummy, full of fiber, and when you’re packing lunches for the week sometimes you need to switch things up. So, now I’m the proud owner of a three pound bag of dates. #givemeallyourdaterecipes926Dattes_deglet_from_Biskra

I’ve had exactly two brainwaves about what to do with my bag full of dates: jalapeño popper stuffed dates and Indiana Jones biscotti (I should mention that I have a yen for making literary and pop culture themed biscotti). Given that it’s football season, I went with the one that can be taken tailgating or to your next watch party (and I’m curious, given some recent stats I saw about NFL watch numbers … do you think more people watch college ball these days or nah?). Or book club. WHATEVER YOUR NEXT EVENT, MAKE THESE. Jalapeños. Cream cheese. Bacon. And dates. Admittedly, that last one might have thrown a lot of you. But trust us, precious, we know what we’re doing … mostly. Okay, like half the time. You should totally make these though, they are the PERFECT combination of salty (bacon), sweet (dates), and heat (jalapeños).

SIDEBAR: Also, in case you missed it, people are putting apples in their guacamole. These people are WRONG and deserve to be shunned. Stop adding things to guac, folks. It’s already perfect. Full stop.

Jalapeño Popper Stuffed Dates

Ingredients:IMG_4600

12 deglet noor dates, pitted
3 ounces reduced fat cream cheese, room temperature
3 slices bacon, cooked crisp and crumbled
12 pickled jalapeño slices
fresh cracked pepper, optional

 

Directions:

Add fresh cracked pepper and bacon to cream cheese; mix until combined (an interesting sub here would be to use jalapeño cream cheese for EXTRA heat).

Fill each date with just enough of the cream cheese mixture to dome at the top.

Top with a jalapeño slice.

Dig in!
