Pistachio, Cherry and Honey Pancakes
Happy Fat Tuesday, Shrove Tuesday, Paczki Day, and Pancake Day … basically happy eat all the stuffs before Lent day! No matter how you celebrate today (and really, you should as there is A LOT of amazing food out there for the eating) you must make these pancakes. Yes, they are that nummy. Added bonus: they’re protein packed, which basically makes them health food.
Okay, campers, I need you to brace yourselves as I have a secret: I do not make pancakes from scratch. I KNOW. It’s just so easy to grab a mix and be done with it. Double added bonus is that someone else is in charge of making my pancake mix healthy … and add things like whole grains and protein powder in the correct increments (I am using Kodiak Cakes Protein Packed Flapjack and Waffle Mix here … the Buttermilk and Honey mix is equally as nummy).
Now that I have that off my chest, time to tell you more about these yummy pancakes you should definitely make for Pancake Day and NOT crepes because they serve no real purpose in life. Yes, I said crepes are icky. They’re thin and people use them as a vehicle to eat Nutella and strawberries … just eat the Nutella and strawberries and forgo the crepes (bonus: I had a friend in grad school who for some reason called crepes “creepies” and this how I refer to them in my head, always.)
As an added yum and protein bonus these pancakes are topped with Greek yogurt (and pistachios) instead of syrup. That is not to say if you want syrup you cannot have syrup, but I encourage you to try your pancakes this way. Extra filling. Extra yum. Extra good for you. Like I said at the beginning of this post: HEALTH FOOD PANCAKES.

½ cup Kodiak Cakes Protein Packed Flapjack and Waffle Mix (or your favorite mix)
½ cup milk
½ egg, beaten
1.5 tsp honey
4 TBSP shelled pistachios
6 TBSP Greek yogurt (vanilla or honey would be yum)
4 ounces cherries, frozen
Mix together pancake mix, milk, egg, and honey. Set to the side.
Heat skillet over medium heat. Melt a little butter in the bottom of the skillet if it isn’t no-stick.
On a different burner heat frozen cherries over medium heat until they have fully defrosted and leached juice.
Using a ¼ measure pour pancake batter into heated (and buttered) skillet. Watch for small bubbles in the middle of the cake, flip and continue to cook for another minute or so. Repeat process until all four pancakes have been cooked.
Top each stack with 2 ounces cherries, 2 TBSP pistachios, and 3 TBSP Greek yogurt.
