Simple as Do, Re, Mi: Peppermint Chocolate Discs
Yes. Hi. Hello. Christmas is LESS than a week away. I KNOW. I’m not ready, in case you’re wondering. Every year I say I’m not going to do this, that I will not get caught up in the whatever and this year I will be prepared and have an easy-breezy Christmastime. And here we’ve come to the part where I throw my head back an laugh till I cry. I’m a lying liar who lies to myself (but aren’t we all about being prepared for the holidays): this year between Mercury being in retrograde, the shorter days making my S.A.D. super fun, and having 97,000 commitments every weekend time really did truly and honestly get away from me.
The answers to most woes in life is chocolate – shut up, yes it is. In this case it’s chocolate discs drizzled with white chocolate and a smattering of crushed peppermint sticks. They’re festive. They’re edible. They’re customizable (don’t like peppermint try pistachios and dried cranberries). They’re perfect.
No time to make chocolate disks, but need something über festive (and maybe with a historical side note you can share?) – hit up my cran-apple wassail recipe for the perfectly festive Christmastime punch.
Note: these discs were created using a mold, but you can 100% make discs without a mold (it’s easy and if you don’t want them to be different sizes you can draw circles on a piece of paper and put it UNDER the parchment or silpat and use it as a pattern).

SIDEBAR TWO: I am counting down to The Post release date. It’s circled in my planner. I will see this movie on opening weekend, so help me. If you’re familiar with the All the President’s Men then you know all about The Washington Post and Watergate. What you may not know from watching the film is that Katharine Graham was the first female publisher of a major American newspaper HELMED the paper at this point in history – she’s a throw away line in that movie. The Post puts Graham back on the board as it were. It appears the movie is about a powerful woman’s struggle to claim her place and to be taken seriously – been SEEN for her accomplishments and achievements – in a world run by men AND I AM HERE FOR IT.
chocolate bars of choice (milk or dark)
white chocolate baking chips
smashed peppermint sticks
Slowly melt chocolate bars over a double boiler, stirring constantly. Have a bowl of white chocolate baking chips ready to take the place of the chocolate over the double boiler to melt – OR – if you’re feeling lucky try your hand at melting them in the microwave.
Once chocolate is melted either fill your mold OR spoon 1-2 TBSP of melted chocolate out onto your sheet of parchment and smooth into the shape you want.
Let the chocolate cool JUST A BIT before you drizzle white chocolate over the top and then sprinkle with peppermint pieces.
The chocolate should cool and set up at room temperature just fine. Pop out from mold or peel off parchment and box up (if you’re worried about the chocolates getting to warm on the counter you can pop them in the fridge).0
