Small Batch Cinnamon Roll Muffins

Some Sunday mornings are lazy in my house. I like to curl up in my oversized leather chair, put on some jazz, sip my coffee, and read whatever novel I’m working my way through. Cooking a big Sunday style breakfast interferes with my cozy, lazy morning.

This is where this quick, no-fuss, and minimal-muss recipe for small batch cinnamon roll-esque muffins comes in handy. I mean, this recipe is basically as close as I will ever come to fulfilling an Accio Cinnamon Roll spell. Yes, I’ve tried (like you haven’t?). Don’t judge.1208book-690584_1280

These little rolls are delightfully decadent, partially because they’re small and adorably gooey when covered with the glaze. What is it that makes small things SO MUCH CUTER than regular sized things? Whatever magic small things hold over us, these muffins have it in spades. Really, you should just make some now … it takes under 45 minutes from first measure to first bite.

Also: if you LOVE steamed milk and foam in your coffee (raises hand, waves furiously) you needs to get yourself a milk frother precious, yes you do. I have a Nespresso Aeroccino and I love it. It froths milk for both hot and cold drinks and I use it every day. Why drink boring coffee when you can have perfectly made café au laits or iced lattes everyday?

Small Batch Cinnamon Roll Muffins

Modified from Dessert for Two

Ingredients:

Cinnamon Roll Muffins:1208cinnamon-99655_1920
3/4 cup flour
2 TBSP granulated sugar, divided
1/2 tsp baking powder
¼ tsp baking soda
1/8 tsp salt
5 TBSP milk
1 tsp apple cider vinegar
4 TBSP melted butter, divided
2 TBSP light brown sugar
1 tsp cinnamon

Glaze:
2 ounces reduced fat cream cheese
¼ cup powdered sugar

Instructions:

Preheat the oven to 375.

Combine the flour, 1 TBSP of the sugar, baking powder, baking soda, and salt in a medium bowl.

In a small measuring cup, combine the milk, vinegar, and 2 TBSP of the melted butter.

Add the wet ingredients to the dry, and stir until a soft dough forms.

On a heavily floured a work surface knead dough out into a rectangle about 6″ long. Use plenty of flour.

Brush melted butter into four of the cups in a muffin pan.

Brush the remaining melted butter on top of the dough (don’t feel like you need to use it all).

Combine the brown sugar, cinnamon, and remaining 1 tablespoon of granulated sugar. Press this mixture lightly into the butter on top of the dough. Rolling away from you, roll the dough up starting with the long side. When you get to the end of the dough, pinch the entire seam shut.

Cut the dough into 4 equal pieces, drop into the greased muffin cups, and bake for 14-16 minutes.

Meanwhile, using a spatula or a spoon, mix together the softened cream cheese and powdered sugar.
Frost the cinnamon rolls when they come out of the oven, and serve.
